Dark Chocolate Cupcakes with the Creamiest Cream Cheese Frosting

Since I didn’t get to catch up with you yesterday, how was your weekend?

Mine was pretty great. We went out with some friends on Saturday and had an amazing dinner at Hapa Izakaya. I must admit, Izakaya was something I heard about quite a while ago when it was probably actually up and coming in Vancouver. Now I’m super behind the times as usual, but I finally was able to try it a few months back. A bunch of my girlfriends and I, went to Guu in Gas Town and it was awesome.

I was really happy to try another Izakaya restaurant for comparison. For those that haven’t heard of Izakaya, or aren’t sure what it is, basically it’s kind of like Japanese tapas! Super fun…and delicious!

I kind of forgot that it was still Dine Out Vancouver happening, so that was a nice surprise. We got to order off the Dine Out menu which was 3 courses plus dessert for $28. Since there were four of us, and we were all eager to try everything, we ended up getting 16 different dishes and sharing! That was an excellent way to try a big portion of the menu in one visit. I also ordered a delicious cocktail that was made with vodka (I believe,) pear puree and soda water! It was delicious and I am kind of sad I’m not sipping on one right now!

We loved everything and the service and ambiance was great too! Thanks to Hapa for a great evening.

On to zee cupcakes! I know, I know, these are chocolate cupcakes with cream cheese frosting….boring! Right?




Super Easy Mint Chocolate Truffles

Hey Guys!

I hope you are all having a fabulous Thursday so far. My week has been a bit bananas, hence the not posting. Sorry!

Mr. Delish and I are supposed to wrap up our Christmas shopping tonight (read: I had to bribe him with food court chinese food to get him to reluctantly agree to come)

EVERY gosh darn year, I get my Christmas shopping done SUPER early. Like beginning of December early. Considering I can be a horrible procrastinator, that is like a miracle.

A Christmas miracle, you could say.

Anyways, before I can even pat myself on the back for suppressing my inner procrastinator, I remember that Mr. Delish hasn’t even STARTED his shopping yet. And by started, I mean, hasn’t even thought for one second about who he needs to buy for or what he may get them.

The first couple years that I came across this issue, I would drag him to the mall, and be like “OK, what do you need to get?” and he would wander around aimlessly with no clue what he was going to buy or who he needed to buy for.

Luckily we’ve been together a long enough time (almost nine years, what??) that I am smart to his ways. Now I always make sure to get him locked in on his gift ideas, well before time. Then all I have to do is bribe and weasel my way into bringing him to the mall and picking up the items.

It’s easy…ier than before.

Okay, onto the food.

This is that third truffle recipe, you know the one that I was supposed to post a week ago?

Ya…that one.

These are SUPER EASY (hence the name) and incredibly yummy for how simple they are. My mom has been making these every Christmas since, before I was born I think?

I love them and Christmas wouldn’t be the same without everyone eating these all before Christmas even happens. Then my Mom yells and swears that she won’t be make another batch…”those will be the end of them!” Then she promptly makes another batch.

I love my Mom.


Peanut Butter S’more Truffles

Hey Ya’ll! I hope you are all having a great week so far.

My week has been pretty good so far! I am looking forward to receiving my insanely impulsive order from Forever21! I got a couple awesome steals with their Thanksgiving sale and they are getting delivered tomorrow.

Forever 21 doesn’t have the best quality stuff but I find if you’re looking for trendy items, they have a big selection and chances are if you’re following trends, the stuff will last longer than you will wear it anyways. I also like getting just plain tees and tanks from there because they are super inexpensive.

Anyways, on to day two of truffles!

These are a new creation for this year, when we were making those Coconut Snowballs, we also whipped up these peanut butter numbers!

They are super tasty, especially if you love the peanut butter + chocolate combination. I also think they are really cute and pretty, and just like the Snowballs, they are incredibly easy to make!

They look pretty on a plate with other Christmas cookies and treats too. Just make sure to keep them hidden in the freezer until you need them, or they will be gone before you know it!

Try putting them in a container labelled ‘Thanksgiving Leftovers 2005’, and they might stand a chance.

Peanut Butter S’more Truffles

Prep Time: 45 minutes

Cook Time: 5 minutes

Total Time: 50 minutes

Yield: Makes 24 truffles

Peanut Butter S’more Truffles

Delicious and easy to make peanut butter truffles coated in chocolate.


  • 3/4 cup creamy peanut butter
  • 1/4 cup softened butter
  • 1 cup powdered sugar
  • 1/2 cup graham cracker crumbs
  • 2 cups milk chocolate melting wafers
  • 1/2 cup finely chopped peanuts


In a medium bowl, mix together peanut butter, butter, powdered sugar and graham cracker crumbs. Roll into balls and place on a baking sheet lined in wax paper. Once you have them all rolled, place the entire baking sheet into the freezer for 30 minutes, until hard.

Add your chocolate to the top of a double boiler, or bowl over a pot of simmering water. Stir occasionally until the chocolate is melted and smooth, turn the heat off and just leave the chocolate over the hot water to keep the chocolate warm.

Using a fork or I used a fondue fork again (which works awesome,) dip each peanut butter ball into the chocolate and turn to coat. Allow the excess chocolate to drip off and then place the coated ball back onto the baking sheet. Repeat with the remaining peanut butter balls and once finished, return them back to the freezer to set completely, about 1-2 hours.

Store the truffles in an airtight container in the freezer until you want to serve them. To serve allow them to come to room temperature.


Make these ahead of time and freeze them in an airtight container, they will last for weeks! They thaw out in no time when you need them.


Coconut Snowball Truffles

Who’s started her Christmas baking? THIS girl.


I think this is the first time ever that I started before the beginning of December. My mom and I started last weekend and we already have four different things made.

One of those things was White and Milk Chocolate Swirled Bark with Cranberries and Pecans which is no longer with us….due to some family members, that I will not mention, eating it all before December even hits.

The remaining three of those recipes I will be sharing this week and this is one of them!

As evidenced here, here, here, here, here, here, here, here, here, here aannnnnnddd here, I kind of like coconut.

Which is why it was the obvious choice to make into a delicious truffle to enjoy over the holidays. This recipe uses my most favorite thing ever, coconut oil! Which means these are basically like a health food.

Okay, so maybe not.

Healthy or not, they are easy and delicious and you should make them.
