Pinteresting Things Tuesday

Hey ya’ll

Since I’ve been on a Pinterest binge the past couple weeks, I wanted to do up a little post of all the things I’ve been obsessing over on that dang website.

I am going to try making this a weekly thing but you all know how bad I am at that. So bear with me.

1. Peppermint Mocha Cupcakes


Umm, heck yes! My favorite winter drink made into a cupcake? Yusss.


2. Bahn Mi Pizza



Is this a thing?? I am always amazed by the new ways people switch up the basic pizza!


3. These Crockpot Carne Asada Nachos



Nachos are like my holy grail pub food. Plus these ones look all vegetable-ey.


4. Spring Samosas with Sweet and Spicy Mint Chutney



Samosas are one of those favorites that I always forget about. These are a neat twist on the classic Samosa, it uses rice paper wraps instead of pastry, so they’re even guilt free!


5. This Cheesy Artichoke Pumpkin Dip



Serving it in a pumpkin? Priceless.


6. Pumpkin Cake with Candied Pumpkin Seeds Inside





7.  Asian Salmon Tacos



I never thought of using salmon in tacos! What a wonderful idea.


8.  Pan Fried Pork Dumplings



Just yum. Would be perfect for a Dim Sum brunch.


9. This Fudge Sundae in a Cookie Bowl



What the…what?


10. Pumpkin Ravioli with Hazelnut Brown Butter Sauce and Balsamic Drizzle.

Pumpkin Spice Donuts

So, I made these little cuties.

They’re just so….*ahhhh* angels singing.

And to boot they’re freakin’ easy and quick to make.

All you need is a spice cake mix, can of pumpkin puree, oil, eggs, cream cheese, powdered sugar and milk. OH and sprinkles, can’t forget the sprinkles.

Mind are just terrible looking, compared to the beauties on this pinterest pic.

I just chalk it up to the fact that none of my pinterest endeavors will ever look like the picture. Much less disappointing that way.

Mini Strawberry Shortcake Cheesecakes

I like cheesecake.

Actually, I have to admit, I am a really high maintenance cheesecake eater.

Cheesecake do’s and don’ts:

DO make sure the crust is thin and crispy

DON’T make the crust hard as a rock and 3 inches thick. If you can’t cut through it with a fork with very little pressure, it’s too thick.

DO serve it with a light topping (if it is a fairly plain cheesecake)

DON’T serve it with 10 lbs of cookies, chocolate syrup,  nuts, and whipped cream. Keep it simple!

DO make sure the recipe you’re using calls for LOTS of cream cheese and not too much of anything else. It is CHEESEcake we’re talking about here.

DON’T try to make this a low calorie dessert.

DO let me know what your favorite cheesecake recipe is

DON’T get weirded out when I show up at your house for dessert

Mini Lemon Sugar Donuts

Good afternoon everyone! I hope you are all having a wonderful day so far!

I really hope it is nice and sunny wherever you are! It has been pretty nice in Vancouver the last few days. We had a gorgeous weekend and it has been pretty hot and sunny since then.

What have you all been up to lately?

I haven’t been doing much cooking lately which is obvious due to my pathetic amount of posting the last couple weeks! I have been a little preoccupied because we have a trip to Vegas coming up next week. It’s for my Momma’s 50th birthday and a bunch of her friends from high school are coming as well. I have pretty much been planning the whole thing, which I love. I love being organized and having copious amounts of lists. I am also the queen of excel spreadsheets, love ’em.

I am only slightly embarrassed to say that I researched which places near our hotel have good happy hours and have the info recorded in my phone.

The other reason I have been preoccupied is that we got invited to see a friend DJ at one of the Rehab Pool Parties while we’re in Vegas. I’m really excited to go but that also means I have to wear a bikini which is kind of scary. Let’s just say this whole food blogger gig has taken a toll on the old bod.

I am usually fairly active, I eat healthy for the most part and I try to hit the gym as often as possible, but I decided to amp it up a notch and I started doing Insanity.

I know, I’m crazy.

Trust me, I am reminded of that fact every time Shaun T, tells me to “dig deeper.” Although it is a super crazy workout and I am sweating like crazy after, I have been having lots of fun with it and found myself sticking with it more than any other workout I tried.

So in a nutshell, that is why I have been kind of MIA.

So now onto a better topic, donuts!
