Caramelized Onion, Spinach and Tomato Frittata with Asiago

Good morning everyone! I hope you are all having a fabulous day so far.

What did you all get up to last night?

I didn’t do much, just relaxed. Caught up on some TV on the PVR that I haven’t gotten around to watching. A couple of the shows I watched:

-Finale of New Girl: Sort of a cliffhanger ending! What is going to happen with Schmidt and Cece??!!

-SNL episode with Ben Affleck and Kanye West: Ben Affleck was hilar! I love any of the ones with Stephen and surprise appearance by Amy Pohler? YAY. What the heck is up with Kanye’s new music style, though? That’s wack.

Other than that I didn’t do much, I have been feeling super tired lately so hopefully it passes. I think it has something to do with this dreary weather we’ve been having in Vancouver.

C’mon sun, I need some Vitamin D!

Does anyone want to have breakfast with me today? Frittata is on the menu!

Actually, I could only wish this is what I was having for breakfast! I’m pretty sure I’ll be eating Mini Wheats and a banana…

This is so much…yummier!

I am a big fan of eggs for breakfast, I am not a huge ‘sweets for breakfast’ person, so I usually lean towards eggs and toast kind of thing. Lately I’ve been making breakfast tacos, which are really tasty, but that is a recipe for another day.

Today we make frittata.

Wynn Las Vegas – Weekend Brunch Buffet

Good morning lovelies!

I hope everyone had a great weekend, and those of you that are in the US, I hope you had an awesome Memorial day long weekend!

I promised you last week that I would get a little post together about a crazy good meal we had when we were in Vegas last weekend, so here it is! I am going to jump right into it because I have a lot to get done today.

The restaurant I am talking about is the Buffet at the Wynn. I know, I know, you’re probably thinking, ‘a buffet? really?’ of all the restaurants in Vegas it seems really odd to review a buffet. BUT I promise you that this will be the best brunch buffet you ever go to. It’s crazy!

They run a regular breakfast buffet from Monday – Friday that I believe costs somewhere around $21, which is pretty much on par with all the other hotel buffets, although I can assure you this one is better. THEN on the weekend, they run their famous brunch buffet which costs $31 (I think.) I couldn’t find the prices posted on their website so don’t hold me to that. I know it is definitely just over $30. Now I know that seems super expensive for breakfast and if you’re not a huge foodie or a big eater, you might not really get much out of it. We originally went with a couple of the other people on the trip and we were the only ones that decided to bite the bullet and go. For the others they didn’t think it was worth it for them personally, and I totally understand that. If you’re a foodie, though, you’re in for a treat.

Please excuse the iphone photos, I chose not to bring my DSLR to Vegas for a couple reasons, mainly because I didn’t want to lug it around the whole time and I was worried it might get broken/stolen/lost with all the shenanigans that seem to go on in Vegas.

I showed you a couple photos of the Wynn in my last post, but here are a couple more of the entry way into the hotel & casino.

It was so gorgeous! There were tons of flowers everywhere and the trees were all lit up.

The buffet it self is beautiful as well, it kind of has a French garden theme, with topiaries, fruit and more flowers. The tables and chairs were really pretty as well. The atmosphere is definitely elegant yet relaxed.

Brown Butter & Coconut Pancakes

You know what’s really awesome?

When I get so busy at work that I can’t muster up one measely post in two freakin’ weeks. And then when I get home and I plan to sit down and get a post together and its so hot in my house that all I end up doing is not cooking dinner and sprawling in whatever spot is currently the coolest.

Oh and by “coolest” I mean the one that is 895 degrees unlike the rest of the house which is sitting at an even 900.

Since I was a bad, bad, blogger, I am going to make it up to you by letting you make fun of the things I am currently obsessing over. There are definitely ones that are worthy of some public flogging (ahemmm #3.)

1. This “DIY” ottoman which I found on Pinterest, unfortunately I have neither $822 or any artistic ability so I am pretty sure I will never own one.

2. The Beauty Department’s website. Which makes doing crazy nail art look sooo easy when really it is nearly impossible. Thank goodness I was able to figure out the sock bun or I’m not sure what I would have done with myself!

3. Onepiece. That is all. Oh yeah, I reallllyyy want this one.

4. Getting a Starbucks gold card. Seriously guys this is an unhealthy and expensive obsession

5. I rustled up enough self control to not start doing this but pretty soon, pinning.new.fall.wardrobe. It’s happening.

Okay now that you guys have some material, let’s get to the recipe for today.

I told you before that I’m not a HUGE pancake fan. Unfortunately for me, Mr. Delish pretty much requests pancakes every single Sunday morning. Which sucks for me but sometimes it can’t be all about me. And by sometimes I mean, for 10minutes one day a week.

The one thing that helps me get through pancake Sunday, is making fun variations and add ins. Fruit is always good, I like me some banana or blueberries. Chocolate chips are a good ole stand by. And I already did the brown butter thing, which was amazing. But brown butter AND coconut? Heck yes!

Oh and I’m pretty happy if I can somehow incorporate coconut into a recipe, because I love it to bits.

Also, I dropped the big container of coconut all over the floor when I was in the middle of making these. Ya, fail.

Brown Butter & Coconut Pancakes:

Serves 2

1/2 cup butter

1 1/2 cups all-purpose flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 1/2 cups milk

1 egg, beaten

1 tsp coconut extract

1/2 cup sweetened shredded coconut

More butter for cooking.

Butter and Syrup for serving

 

In a small pot, melt butter over medium high heat until melted and bubbly. Lower heat and allow to turn a light golden brown. Remove from the heat as the butter will continue to brown. Set aside.

In a large mixing bowl, mix together the flour, baking powder salt and sugar. Make a well in the center and add the milk, egg, and coconut extract. Mix until just combined, add the browned butter and stir to combine again.

Heat a pan or griddle over medium heat.

Pour about 1/4  cup of batter for each pancake and then sprinkle about 1 tbsp of coconut onto each pancake. Cook until there are bubbles coming through the middle of the batter, about 2 mins. Flip and cook for another minute or so on the other side. Remove from the pan and keep warm while you’re making the other pancakes.

(obviously if you’re using a griddle you can make more than one at a time)

Once you have used all the batter, serve the hot pancakes with butter syrup and strawberries!

Butterscotch & Brown Butter Pancakes

Good Morning Everyone! Happy Monday…uh..ya right.

I am thoroughly tired today and I’m not sure why. I just didn’t want to wake up this morning, maybe because its cloudy and drizzling outside. Not exactly a glowing endorsement to get out of bed.

This weekend was my Momma’s birthday, we had everyone at our house in the afternoon and we had some beers in the sun (before the weather took a turn for the worse.) For dinner I whipped up Pioneer Woman’s Grilled Chicken with Lemon Basil Pasta. YUM. This is not the first time I’ve made this recipe, it is SOOO good. Like to die for good.

Pioneer Woman is the bomb.

Then on Sunday morning, I made these little babies. The idea popped into my head when I saw the unopened bag of Butterscotch chips I bought with plans to make Butterscotch Pie but never ended up doing it.

Then I thought what other ridiculous ingredient can I add to this to make it not only super sugar sweet, but also buttery.

Um butter?

Yes, good idea but I need something BETTER than just melted butter.

Brown butter?

Ding Ding Ding! We have a winner people.

PS. This is seriously how my thought process works.

So if you’re looking for a recipe that gives you an excuse to brown up some butter,

Gives you a sugar rush to start your day,

Allows you to use up those butterscotch chips you don’t know what the heck to do with,

Allows you to use up those…2 pounds of butter you weren’t sure what to do with….,

And still leaves room to smother with more butter and syrup?

Then this is the recipe for you.

Ps. You have quite the list of demands there.

Nommity nom nom.I wish it was Sunday so I could:

A. Eat these again

and

B. Go back to sleeeeeeep.

Coconut & Strawberry Breakfast Parfaits

Good morning everyone! This is my first official post on my new blog and I love it.

I am getting geared up to go camping this weekend which pretty much means packing yoga pants, a book, margarita fixin’s and beer and NOT packing makeup, a blowdryer, healthy food or my dignity.

It’s going to be a great weekend ya’ll.

In fact, this non recipe would be great for camping because it doesn’t involve cooking. Well unless you count toasting coconut, which you can always do over the open fire and get back to your caveman roots…or maybe just set your beat up uggs on fire, that’s probably what I’ll end up doing.

Basically this recipe requires you to dump some things into a bowl and eat, which is really my idea of a recipe!

Coconut & Strawberry Breakfast Parfaits:

Serves 4

1 cup sweetened shredded coconut

3 cups sliced fresh strawberries

2 cups Coconut Greek Yogurt (if you can’t find coconut yogurt I suggest using vanilla and mixing in some shredded coconut)

2 cups of your favorite granola

Heat a saute pan over medium high heat, add the coconut and toast until golden brown 4-5 minutes, stirring often. Remove from the pan and set aside to cool.

Grab 4 serving bowls and start by adding 1/4 of the strawberries into each bowl. Top with 1/4 of the yogurt and 1/4 of the granola. Finally, top with 1/4 of the toasted coconut.

Dig in!

 

P.S I only wear uggs camping these days, I promise.
