Strawberry Citrus Salsa

I know this is totally weird sounding. I was actually kind of scared to try it at first, but being the only one home at the time, I had to do it. Does anyone else do that? Finish making something and then stand in terror with a spoon in your hand, until you finally get the courage to dig in and try it?

Just me? …Yeah that’s what I thought.

This salsa would be great on grilled chicken or fish and even better in a fish taco, which is how I ate it.

Strawberry Citrus Salsa:

2 cups diced strawberries
2 tbsp chopped onion
1/2 jalapeno, de-seeded and minced.
Zest of one lemon
Juice of half a lemon
1/2 tsp salt

In a medium bowl, mix together all the ingredients. Set in the fridge for at least half an hour to let the flavors get to know each other.

    This looks absolutely delicious! Great pictures! And I definitely know that feeling of making something new and then being scared to take the first bite. I am also terrible at tasting while cooking and adjusting spices along the way. I usually do that blindly and it usually works out!

    This sounds wonderful can't wait to try it. I remember that feeling when I made Cranberry Salsa, Have you tried it? It's great as a dip or on a turkey panni.
