Pasta a la Easy Peasy Rose Sauce

So last night my sister was graduating from high school. Sigh. I get misty eyed when I think about it, but she has sure grown up without me noticing. Until my mom gave me one of her graduation photos. I fainted and when I came to, I questioned why she was receiving them so early. Apparently its the end of May already. Nobody told me.

Anyways the whole point of this story is that we had almost zero time to make/eat dinner last night so I decided to whip up a quick vegetarian pasta dish with what I already had on hand.

Here’s what you need:

You’ll need Olive Oil, a couple cloves of Garlic, Half an onion, Fresh Tomatoes, Red Pepper Flakes, Dried Oregano, Tomato Paste, Tomato Sauce, Half and Half, Salt, Pepper, Dried Pasta and some Parmesan. Measurements to follow.

Throw a big pot of water on to boil and while you are prepping the sauce have the pasta cooking so it is all ready at the same time. Cook the pasta as per the package directions.

Start by chopping your veggies. We need to dice up the tomatoes and set them aside, finely dice the onion and mince the garlic.

Heat the olive oil in a saucepan over medium heat and add the onion. Saute for a minute or two until softened and then add the minced garlic. Make sure you stir so the garlic doesn’t burn, once the garlic is fragrant, add oregano, red pepper flakes, salt, pepper and tomato paste. Stir together until the tomato paste is combined with the other ingredients.

Add the fresh tomatoes, tomato sauce and half and half and stir. Taste it and add more salt and pepper to taste if needed. I also ended up adding about a tablespoon of sugar because I felt like it needed it. Let it simmer away for a few moments until nice and hot.

By now the pasta should be done. Drain the pasta and toss with the sauce in a big bowl or serving dish. Grate a generous amount of Parmesan cheese over the top and serve with some garlic bread for dipping. YUM.

Make this for dinner tonight if you are short on time like me! If you have lots of time make something much more elaborate and time consuming and then if you can just stop by with some for me, that would be great. Thanks.

1 Tbsp Olive Oil
2 Cloves of Garlic
1/2 Onion
2 Tomatoes Diced
1 Tsp Oregano
1 Tsp Red Pepper Flakes
Salt and Pepper
1 Tbsp Tomato Paste
1 Cup Tomato Sauce
1/4 Cup Half & Half
1 Tbsp Sugar (optional)
1 Package of Dried Pasta ( I used a crazy shape that I found at a specialty store but normally I would use linguine or penne)
Grated Parmesan cheese to taste.
