How is everyone doing today? I am on my second cup of coffee and feeling amazing!
Can’t wait for 3pm when my energy levels drop and I feel like I’m gonna pass out. Anyone else have the 3pm slump?
Well last night before I headed off to workout, I was at home alone and decided to make myself a yummy dinner. I stopped at this cute little store we have nearby and bought all the stuff to make this sandwich.
Sometimes making dinner for yourself can be annoying, it’s hard to make a recipe for just one person. Not to mention, usually you don’t feel like cooking an elaborate dinner for yourself.
BUT there are positives to cooking for one as well! You can make whatever your little heart desires and don’t need to worry if someone else won’t like it. Usually you don’t have to make a gigantic mess in the kitchen and you don’t have to be concerned that someone will come along and eat your extra bacon.
Okay so let’s make a sandwich shall we?
Yes, I just bought two pieces. How is that even humanly possible?
Oh, and you should probably cook the bacon first, ya, do that.
Then, fresh mozzarella, tomatoes, basil, the COOKED bacon, olive oil, balsamic vinegar, kosher salt and pepper.
Toast up the bread
Drizzle with a little olive oil
Lay on a couple slices of mozzarella
Now drizzle the mozzarella with about a teaspoon of balsamic
And sprinkle with kosher salt and pepper. I love the crunch of the kosher salt, soo good.
Now top with some sliced tomatoes
And basil leaves!
Now put a lid on it.
Enjoy folks, this is just a dang good sandwich.
And it’s ALL yours.
