Mini Strawberry Shortcake Cheesecakes

I like cheesecake.

Actually, I have to admit, I am a really high maintenance cheesecake eater.

Cheesecake do’s and don’ts:

DO make sure the crust is thin and crispy

DON’T make the crust hard as a rock and 3 inches thick. If you can’t cut through it with a fork with very little pressure, it’s too thick.

DO serve it with a light topping (if it is a fairly plain cheesecake)

DON’T serve it with 10 lbs of cookies, chocolate syrup,  nuts, and whipped cream. Keep it simple!

DO make sure the recipe you’re using calls for LOTS of cream cheese and not too much of anything else. It is CHEESEcake we’re talking about here.

DON’T try to make this a low calorie dessert.

DO let me know what your favorite cheesecake recipe is

DON’T get weirded out when I show up at your house for dessert

Caramelized Onion, Spinach and Tomato Frittata with Asiago

Good morning everyone! I hope you are all having a fabulous day so far.

What did you all get up to last night?

I didn’t do much, just relaxed. Caught up on some TV on the PVR that I haven’t gotten around to watching. A couple of the shows I watched:

-Finale of New Girl: Sort of a cliffhanger ending! What is going to happen with Schmidt and Cece??!!

-SNL episode with Ben Affleck and Kanye West: Ben Affleck was hilar! I love any of the ones with Stephen and surprise appearance by Amy Pohler? YAY. What the heck is up with Kanye’s new music style, though? That’s wack.

Other than that I didn’t do much, I have been feeling super tired lately so hopefully it passes. I think it has something to do with this dreary weather we’ve been having in Vancouver.

C’mon sun, I need some Vitamin D!

Does anyone want to have breakfast with me today? Frittata is on the menu!

Actually, I could only wish this is what I was having for breakfast! I’m pretty sure I’ll be eating Mini Wheats and a banana…

This is so much…yummier!

I am a big fan of eggs for breakfast, I am not a huge ‘sweets for breakfast’ person, so I usually lean towards eggs and toast kind of thing. Lately I’ve been making breakfast tacos, which are really tasty, but that is a recipe for another day.

Today we make frittata.

Wynn Las Vegas – Weekend Brunch Buffet

Good morning lovelies!

I hope everyone had a great weekend, and those of you that are in the US, I hope you had an awesome Memorial day long weekend!

I promised you last week that I would get a little post together about a crazy good meal we had when we were in Vegas last weekend, so here it is! I am going to jump right into it because I have a lot to get done today.

The restaurant I am talking about is the Buffet at the Wynn. I know, I know, you’re probably thinking, ‘a buffet? really?’ of all the restaurants in Vegas it seems really odd to review a buffet. BUT I promise you that this will be the best brunch buffet you ever go to. It’s crazy!

They run a regular breakfast buffet from Monday – Friday that I believe costs somewhere around $21, which is pretty much on par with all the other hotel buffets, although I can assure you this one is better. THEN on the weekend, they run their famous brunch buffet which costs $31 (I think.) I couldn’t find the prices posted on their website so don’t hold me to that. I know it is definitely just over $30. Now I know that seems super expensive for breakfast and if you’re not a huge foodie or a big eater, you might not really get much out of it. We originally went with a couple of the other people on the trip and we were the only ones that decided to bite the bullet and go. For the others they didn’t think it was worth it for them personally, and I totally understand that. If you’re a foodie, though, you’re in for a treat.

Please excuse the iphone photos, I chose not to bring my DSLR to Vegas for a couple reasons, mainly because I didn’t want to lug it around the whole time and I was worried it might get broken/stolen/lost with all the shenanigans that seem to go on in Vegas.

I showed you a couple photos of the Wynn in my last post, but here are a couple more of the entry way into the hotel & casino.

It was so gorgeous! There were tons of flowers everywhere and the trees were all lit up.

The buffet it self is beautiful as well, it kind of has a French garden theme, with topiaries, fruit and more flowers. The tables and chairs were really pretty as well. The atmosphere is definitely elegant yet relaxed.

Good morning everyone! I hope you all had a wonderful week!

I haven’t been on here in what seems like forever and I’m so glad to be back.

I sent out a little request for ideas on my Facebook page! I need recipe ideas for next week so either let me know on Facebook or comment below and I may just use on of your ideas!

I have another post to do next week as a little continuation of the Vegas trip. It’s a specific review of one of the awesome restaurants we visited while in Sin City! It was amazing and I will share it with you next week. I even have a little video to go along with it.

For today, I just wanted to drop in and tell you a little about the trip and show you some photos. Just a heads up that I fail at taking photos on vacations, I just tend to focus more on enjoying my trip than taking photos, but I tried to remember to snap some here and there.

Vegas Vacation

“Holy crap, Wayne Newton’s hitting on Mom!”

Name that movie.

Yes, as I mentioned the other day, I’m heading to Las Vegas this week for my Mom’s 50th Birthday. My Mom and her high school friends always wanted to go on a trip together and my Mom has never been to Vegas so about a year ago I started planning the trip.

What better way to spend your 50th Birthday, right?

I am really excited to be able to go as well. Mr. Delish and I have wanted to go to Vegas for a long time, but we really aren’t gamblers so we kind of put it on the back burner. Now that the trip is planned, I am really excited to go down there and have the whole Vegas experience.

That’s right folks, we’ve never been to Las Vegas.

We decided to stay at Treasure Island, mostly just because of it’s central location. It’s close to the big fun mall, as well as some of the other main Casinos like Mirage and Caesar’s Palace.

We don’t have a whole lot planned but we did plan one dinner with everyone, and we took a recommendation from a friend of ours to try Roy’s Hawaiian. We chose Roy’s because it isn’t too fancy and the food sounds really fun and different. Everyone loves seafood as well so it’s perfect.

Then some of the ladies are going to one of the Shania Twain concerts over at Caesar’s Palace.

And Mr. Delish and I are going to go party at one of the Rehab Pool Parties at the Hard Rock Hotel.

Some things I am really excited for:

  • Dining out
  • Hanging out with good company

  • Drinks in general
