Butternut Squash Mac & Cheese

Bring on the fall recipes, people!

This is justtt the beginning, so I hope you’re ready for some squashy, roasty, soupy, caramelized goodness, because there will be a lot of it.

On another note, this will be the first year that Mr. Delish and I will be hosting Thanksgiving at our house! Luckily, we won’t be doing it alone. My sister in law Carley and her husband Graham will be staying with us for the weekend and we are going to make a feast and a half! We also lucked out because Graham is a chef and I am hoping he will teach me some awesome turkey tricks.

We bought a 14 lb turkey for 10 people, so I think we should be okay on the Turkey front.

Since I was craving some fall comfort food yesterday, I decided to whip up this quick and easy mac and cheese, using ALL ingredients I already had in the house. I love it when that happens!

This may seem a little weird, but the base for the cheese sauce is Butternut Squash soup!

You can use homemade, storebought, or if you don’t have any, you can always use butternut squash puree. If you do use the puree I would just nix the addition of flour all together, because it should be thick enough on its own!

You add some yummy cheeses to that butternut base, sprinkle in some sage, pour into a baking dish and top with more cheese and panko.

Bake that baby up and you’ve got an easy, comforting, fall meal!

Plus maybe like 4 lbs added to your love handles, but hey, it’s sweater season!

Butternut Squash Mac and Cheese:

Serves 6

1 box pasta of your choice, cooked according to package directions

2 cups butternut squash soup

2 tbsp flour

1 cup milk

2 cups grated gruyere cheese

1/4 cup grated Parmesan

2 tbsp chopped fresh sage

Salt and Pepper to Taste

1/2 cup panko breadcrumbs


Preheat your oven to 375 and grease a 9 x 12 baking dish.

In a medium saucepan, heat the soup over medium high heat until simmering. Add the flour and whisk until smooth. Add the milk and again whisk until smooth.

Once the butternut/milk mixture has come to a boil and is thickened, stir in most of the gruyere, leaving about a 1/4 cup aside. Add the parmesan and sage and stir constantly until the cheese is melted and the mixture is nice and hot. Taste and season as needed, some brands of soup may be saltier than others.

Toss the pasta in the cheese sauce and pour into the  prepared baking dish. Top with the rest of the gruyere and the panko.

Bake in the preheated oven until bubbly and browned, about 20 minutes.

Serve hot out of the oven!

What I’ve Been Up To

Hey guys, I’ve been MIA lately and I apologize!

Things have been super busy around the Delish household and I’ve been having trouble making time to post.

I have a couple recipes waiting to be posted as well so I will definitely do that this week!

This is what has been keeping me busy the last few days.

My Aunt from Nova Scotia is out visiting this month and last weekend my Mom and I went with her to visit some family on Vancouver Island. My Grandma and Grandpa ‘s house is right on the ocean, and I love going there! It’s so relaxing.

We had a big beach bonfire for my Aunt’s Birthday and I got to see lots of my Family and Friends that I rarely get to see. I also met a new friend who just showed up on the beach to join the party!

His collar said Coop but I named him Brian. Muchhh better.

We were confused because he didnt seem to have any owner nearby and when we looked at his collar it shows that he lived quite far away from the beach. We called his owner and she eventually came down later on but she didn’t seem too concerned about her doggie roaming the beach alone!

She said that he always wandered out of the yard, but she’s the one that should have a fence! I feel so bad for animals that have careless owners.

Anyways, I also made some fall flavored cupcakes for the party!

Those are vanilla cupcakes, topped with homemade salted caramel and then topped with salted caramel frosting and a salted caramel drizzle! Salted caramel overload.

I also had my fill of one of my favorite sweets! My Granny’s homemade glazed doughnuts.

She got up one morning at 5am and made them so they were ready for us when we woke up. YUM!

I also ended up trying something new that was a little scary.

It’s called k’aaw and it is basically herring roe on kelp. Very different and I have to say it wasn’t my favorite, but I was open minded and tried it at least!

I also met another furry friend while I was away, her name is Sophie! I think she is a miniature airedale terrier.

I asked her if I could take her picture and she sat down right away and smiled! Best dog ever.

Anyways, it was a great trip and I came back feeling relaxed and rejuvenated and now I can be ready for fall!

Who is excited for fall? MEEEE.

  • the fall smell in the air

  • sweaters, boots and scarves
  • casseroles

I could really go on and on, but I won’t because I’m probably losing followers by the minute.

I better get going but I will be back tomorrow with a new fall-ish recipe!

My New Baby

No, it’s not a real child. I’m highly irresponsible and that would be a horrible idea.

Since we’re on this topic, I’ll just explain that children frighten me.

I have about 3-4 kids in my life that I can stand for more than 2 minutes and those all belong to my good friends. Even though I can put up with those kiddos, I still wouldn’t describe myself as “good” with them. I just don’t know what to say. I usually end up talking to them like an adult, and then they stare at me because like I’m crazy.

Conversing with kids is just the tip of the iceberg. Try to get me to hold one, especially a baby, and you’ll most likely see me get flustered and quickly make a b line for the door. If you somehow strong arm me into holding your baby, I’ll hold it like its a bomb that could go off any second, and then hand it back to you before it starts screaming.

Trust me, it will start screaming.

Mr. Delish really likes kids so maybe he can be a stay at home dad or something? A girl can dream can’t she?

Anyways lets get to the fun part.

I got a new car this week! I know I said I was getting one last week but things got a bit messed up and delayed. I have pretty much always had VW’s and my most recent car was a 2009 Rabbit, but the lease was up on that one and it was time for something new.

It’s a 2012 Volkswagen Golf TDI!

I love her.

Her name is Roxanne, despite what Mr. Delish says.

It’s a diesel, ya’ll. I’m gonna save me some money on gas.

It has a touchscreen thingy, and bluetooth so I can talk to all my homies!

Yes, I do have homies.

Recipe to Riches

Good afternoon everyone! I hope everyone is having a fabulous day!

I had a pretty great day yesterday because I woke up to find out that the news was finally out!

Yes, it’s true. I am going to be on Recipe to Riches Season 2!

Hey, that rhymed.


It was nice to finally be able to breathe a sigh of relief and I could stop keeping such a big secret. I wish I had a dollar for all those times that people asked me “how did that recipe to riches thing go?” or “Hey, are you going to be on that show?”

To which I would have to lie and say “no, I didn’t make it”

Sorry to everyone I had to lie to! But it was just a wee little white lie and now you all know the truth!

Since people have been asking, I’m just going to quickly go over my journey with Recipe to Riches up until today.

Back at the beginning of  September I saw an ad on Facebook for auditions in Vancouver and I applied just under the wire, I think it was the day before the applications actually closed. Then I got an email back that I was in and I had a set audition time. I was sooo excited. Until I found out my audition was at 8am downtown Vancouver the morning after my BFF Tascha’s big birthday bash.

Tascha was super sweet and she agreed to come with me for moral support and because Mr. Delish had to work and my parents were in Mexico. So I went home after work on Friday, made my recipe to take the next morning, and then went and partied my little heart out for Tascha’s birthday. Then I picked her up at about 6am, sorry again Tasch.

When we got to the auditions there was a lot of waiting, move to a room and wait, then move to another room and wait. All the waiting made me even more nervous. Luckily Mr. Delish is super cute and he sent me these photos to make me feel better:

He sent me good luck wishes from all the animals. Made me laugh and cry at the same time!

Meanwhile, Tascha was hanging out in family and friends waiting room, and she got her picture taken and now shes a big star on the Recipe to Riches twitter page!! They made a photo with her in it their Twitter background. If you wanna look she is the one with the long dark hair on the left, and shes mid clap! haha.

She hates it and I love it!!

Finally I got through the waiting process and I was in front of the judges! They loved my recipe and I got my Golden Ticket!!

“Violet, you’re turning violet, Violet!”


I was sooooo excited. See me?

Just joking, I was really excited.

And now it’s all happening! It’s pretty exciting!

Except I’m not excited for all of Canada to see my goofball self on TV.
