Strawberry G&T

Guess what?

Today is day two of my Birthday celebration! my real Birthday was Tuesday, but Tuesday is a lame day for a Birthday, so I am celebrating again tonight.

Since it’s Friday, and since I’ll be getting my drink on tonight, I think you should too!

I am a big wino and normally I choose to drink wine in most circumstances, in fact I pretty much polished off a half litre to myself on Tuesday…

HEY, it was my Birthday.

Although I likey me wine, gin is usually my spirit of choice if I am to have a mixed drink. People already think I was born 85 years old so why fight it.

Plus gin and tonic is fairly low cal in the realm of mixed drinks so it all works for me. I think a single gin and tonic usually comes in at around 100 calories, so that’s a big plus!

The other night I was making myself a G&T when I noticed I had a bowl of strawberries in the fridge and that’s how this baby was born.

You can feel all fancy when you’re muddling your strawberries and lime. And you can feel all tipsy when you realize you ran out of strawberries….and tonic…2 drinks ago…

What an imagination I have, making up such bizarre stories like that…

Anyhoo.

Strawberry G&T:

Makes one 5 ounce drink

2 strawberries

1 tsp sugar

2 wedges of lime

1 ounce gin (I always buy Bombay Sapphire but use whatever brand you like)

4 ounces tonic water

Crushed ice

 

Cut up the strawberries into quarters, place into a bowl with the sugar and stir. Let them sit for about 10-15 minutes until the sugar granules are dissolved.

In a serving glass, add the strawberries and squeeze in one of the lime wedges, and drop the juiced lime wedge into the glass as well. With a wooden spoon (or you might have one of those fancy muddler things) squash the strawberries and the lime together for a few minutes, until the strawberry is in small pieces. Add the ice, gin and then tonic water and give the whole thing a good stir.

Garnish with the remaining lime wedge.

Enjoy!

Grilled Corn & Avocado Lime Quinoa Salad

I think I’m going crazy. I actually think that I have lost my mind.

I have been pretty obsessive compulsive most of my life and I’ve never had anything be a real problem, until now. I have this compulsion to delete every. single. photo off of my camera card once I have uploaded them to my computer, then I compulsively file them into a separate file for every. single. recipe.

I always had a feeling that one day I would THINK that the pictures copied over to the specifically specific file on my computer but really they wouldn’t have copied and then I would delete the pictures off my card and they would be gone forever.

Yesterday, it happened.

4 out of 5 of my salad pictures never made it into the file and now I’m left with one measly picture.

Sorry guys, I fail.

Also I am 99% sure that I am not going to be able to convince my brain that this is enough of a reason to stop deleting them off the card immediately. I’m pretty sure insanity is going to win over sanity.

It usually does.

Drumroll for the only picture in this post….

Luckily it’s a pretty good one.

You know what else is pretty good? This salad.

Tastylicious it is! (Yes, I do use that word in real life.)

 

Grilled Corn & Avocado Lime Quinoa Salad:

Serves 6

2 whole cobs of corn, shucked

Juice of two limes

1/3 cup olive oil

1 tbsp honey

1 tsp salt

1/2 tsp pepper

3 cups cooked quinoa, cooled

1/4 cup minced red onion

1 whole avocado, diced

2 tbsp chopped jalepeno (with or without seeds depending on how hot you like it)

1/2 cup chopped fresh cilantro

 

Heat up your grill on high, grill the corn on all sides until it is nice and charred in spots. Remove to a board to cool, then carefully cut all the kernals off the cob and set aside.

In a large serving bowl (this is a one bowl salad) add the lime juice, olive oil, honey and salt and pepper. Whisk the dressing thoroughly.

Add the cooked and cooled quinoa to the dressing, along with the cooled corn kernals, red onion, avocado, jalapeno and cilantro. Refrigerate the salad for at least an hour until nice and cold.

Serve with extra lime for spritzing on at the last minute!

 

 

Lemony Honey Mustard Chicken Skewers

Good morning lovelies! I hope everyone had a fab evening and is off to a good Wednesday.

Last night Mr. Delish and I had my birthday dinner at a place called Stonegrill. It is sitting right on False creek and on Granville Island so it has amazing views. We went for a fairly late dinner by the time we both got home from work, so we got to see an amazing sunset. I’ll tell you more about our dinner in another post.

The other night we were getting ready  for dinner and since it was smoking hot here all day, we decided we wanted to make something light and healthy for dinner and we definitely didn’t want to turn on the stove to make anything. We decided to make these chicken skewers and they totally hit the spot!

Best of all? They were super easy to make! I started of by chopping up some boneless skinless chicken breasts into cubes and then threw them in a ziplock bag with some lemon juice, mustard, honey, olive oil and salt and pepper. Let it marinate for a few hours, stick them on some skewers and grill them up!

So easy and delicious. These would be great as an appetizer as well although we had it for our main course.

I also made a yummy salad to go with it and some grilled zucchini, I’ll share the recipe for the salad tomorrow so make sure you check back!

Lemony Honey Mustard Chicken Skewers:

Makes 4 skewers

4 metal skewers or 4 wooden skewers that have been soaked in water for a few hours

2 boneless skinless chicken breasts, cubed

Juice of two lemons

1/2 cup olive oil

1 tbsp whole grain dijon mustard

2 tbsp honey

2 cloves of garlic, minced

1 tsp salt

1/2 tsp pepper

2 tbsp minced chives

 

In a large ziplock bag, add all the ingredients except for the chives, zip the bag closed and then squish the chicken around to mix in the marinade. Refrigerate for 1-3 hours.

When you are ready to cook, skewer the pieces of chicken evenly on the 4 skewers.

Heat up your grill to around 400 degrees and then grill your chicken evenly on all sides until they have nice char marks and are cooked through, about 10-12 minutes.

Either leave the chicken on the skewers or remove it to a dish, garnish with the minced chives and enjoy!

 

Weekend Things

Good Morning Everyone! I hope your Tuesday is off to a good start.

What did you all get up to this weekend?

My weekend was pretty great, I must admit.  On Thursday, my lovely friend Lani asked me if I wanted to go with her to SPF 2012 because she had an extra ticket. Basically it was a 3 day long event at Playland in Vancouver and there were 7 different bands playing each day. We had tickets for Saturday and the performances that day were Danny Fernandez, Gym Class Heroes and OneRepublic, plus some other smaller bands and singers.

We finally got some nice weather her in Vancouver so we got to enjoy the sunshine while we were out and about all day long. The other great thing about this event was that we got access to all the rides at Playland as well!

We went on all of the rides except the dizzy ones, cause lets face it, feeling like you’re gonna barf for 3.5 minutes is just not fun. Luckily we’re both on the same page about that. Some people are freaky weirdos that actually LIKE that.

Instead we started out on the old wooden roller coaster, as far as I know it is one of the last real wooden roller coasters in North America. I’m fairly sure the scariest thing about the ride is that it actually seems like it could fall apart at any second. The whole time the thing is creaking and squeaking, seriously terrifying.

OH AND I forgot to mention that Lani said “Oh we HAVE to sit in the back cart because it’s “SO much scarier that way.” UM YES, it was a lot scarier because we actually got launched out of our seats every time we would go down a hill! This wooden roller coaster doesn’t have actual seats or anything to hold you in other than a metal bar that was siting about a foot above the tops of our laps, so yeaahhh that wasn’t doing much to keep us in the death cart. I was actually scared for my life which was shown in those horrible photos they take of you at the scariest part of the ride.

I forbade Lani  from buying one of those.

Oh and she actually wanted to go on it again later in the day! I was like are you crazy woman?

We went on lots of other rides though, like the swings pictured above, those are always a fair staple ride. We also went on the corkscrew roller coaster which was nowhere near as scary as the wooden roller coaster and it freaking flipped us upside down, twice! And we went on the pirate ship ride which also scares the crap out of me, and then like giant losers we rode the carousel:

All in all the rides were super fun and the concerts were awesome. I came home sunburnt, dehydrated and exhausted, which is really all you can ask for after an all day long outdoor concert!

I woke up on Sunday morning to this:

F1 has been happening around our house a lot lately. To be honest, F1 is my favorite sport to watch next to hockey. And unless you are a very close friend, you wouldn’t know that I am kind of a car nerd. I tried to fight it for a really long time, but after dating a guy for almost 10 years, that is obsessed with anything on wheels (that’s an understatement actually) and then falling ass backwards into a position at a Volkswagen Parts company, I had to give in to the inevitable. Now I just nerd out with the boys and PVR every episode of Top Gear (the UK one of course, not into the American one.)

Anyways, this ended up being quite the post. I had more to say than I thought!

I hope everyone has a great evening, it just happens to be my birthday today! Mr. Delish and I have dinner reservations tonight and we’ll just have a tame evening tonight and then this weekend is party time :)
