Ham & Cheesy Pizza

Good Morning Everyone! Happy HUMP day!! Hehe I really wanted to say that!

I hope everyone is having a fabulous day so far! I started off my day with a nice healthy breaky of Overnight Refrigerator Oats. I told you guys about this on Facebook about it last night and I did end up making them.

The recipe calls for oats, chia seeds, greek yogurt, Milk and whatever flavorings/sweeteners you want. I did really enjoy it but I have a couple things I want to change, first thing is next time I would nix the yogurt, it was too tangy in my opinion. Since I am assuming they added the greek yogurt for the protein factor, I think I might sub in some protein powder next time.

Secondly, I didn’t have chia so I didn’t add it, but I forgot to adjust the amount of liquid I added, so it turned out a bit runny. It was still good but I think I could make it much better. Once I get it up to my standards, I will definitely post the recipe here.

As far as this recipe goes, I wanted to give everyone a yummy pizza recipe that is not so exotic! After some comments on my Butter Chicken Pizza recipe from yesterday, I realized there are a lot of people that live in areas that don’t carry some of the more hard to find ingredients like the butter chicken sauce and sriracha. This recipe contains all ingredients that you should be able to find easily, and it’s also kid friendly!

I mean, I don’t have any kids so I didn’t test this with a kid, but I can’t see how they wouldn’t like ham & cheese pizza!

My favorite is the crunchy cheese around the edges, om nom.

Have I ever told you how much I love pizza? No. Oh Okay, I really love pizza. Like really love it and can eat it everyday of my life.

Ham & Cheesy Pizza:

Serves 3

1 prepared pizza crust on a non stick cookie sheet (not cooked) my recipe is below

1/2 cup pizza sauce, use your favorite brand or homemade if you’re crafty like that

2 cups grated mozzarella

1 cup chopped deli ham

6 slices havarti cheese

 

Preheat your oven to 400 degrees.

Spread the prepared pizza crust evenly with the pizza sauce, leaving a 1/2 border around the sides. Top the pizza sauce with just a small sprinkling of cheese, this helps the other toppings to stick.

Add the ham evenly and follow with the slices of havarti cheese and then top with the remaining mozzarella.

Bake in the preheated oven for 15 minutes, then reduce the heat to 375 and cook for another 5-7 minutes until the cheese is beginning to brown and the crust is golden.

Remove to cool for 4-5 minutes in the pan and then remove to a board and slice into squares.

Enjoy! My Pizza dough recipe below.

Thin and Crispy Pizza Dough:
makes one large pizza dough (size of a regular cookie sheet)

1/2 cup lukewarm water
1/2 tsp sugar
1/2 tsp Yeast
1/2 tsp salt
3 tbsp olive oil
1 1/2 cup flour

In a large bowl, dissolve sugar in water and then sprinkle the yeast over the water. Allow to sit for 10 minutes.

After the 10 minutes is up, add the salt, oil and 1/2 cup of flour, stir until smooth. Add another 1/2 cup of flour and stir again, if the mixture is still very sticky add in a little more flour and begin to kneed. Kneed for about 5 minutes, adding more flour if needed, until the dough becomes soft and elastic. Best thing about this recipe? It doesn’t need to rise! Throw it in a pan, add toppings, bake and enjoy.

Butter Chicken Pizza

Good Morning Everyone! Happy Tuesday! See how I did that? I just skipped right on by Monday. Actually I was just totally swamped yesterday and didn’t get around to doing a post.

What did everyone get up to this weekend?

On Friday when we got home our TV and Internet was down, so I called the cable company assuming that they just needed to reset something. Turns out they needed to send someone out and they couldn’t send someone until Saturday morning, that was frightening. A Friday night with no cable and internet? What were we going to do with ourselves?

We ended up making our pizza and then I remembered that I had some Son’s of Anarchy on my computer, so we hooked up the computer to the TV the old fashioned way since we couldn’t stream.

Then Saturday my Mom and I made a big feast of halibut and chips for the whole family.

Instagramming while frying is dangerous, don’t attempt it.

Then on I told you guys on Thursday that the Eat Vancouver show was on over the weekend. I mentioned last week that I wasn’t sure if I wanted to go since I have been the past few years and it tends to be a lot of the same vendors as previous years, but I decided to go in the end.  I went with my parents, Mr. Delish and my buddy -purses by tascha. We all went for brunch in the morning on Sunday and I had my typical Eggs Benny, I can’t resist, if it’s on the menu I have to get it. Then we wandered over to the show.

I was happy that I ended up going because there were lots of new vendors and it ended up being a great time. It was also Tascha’s first time going so that made it more fun too.

Now back to food! It’s always about the food.

I asked you on Facebook if you had ever tried butter chicken pizza, because I am obsessed with it. We have a Pizza place right near our house that makes a mean butter chicken pizza. I think the place hates me because when I order it, I end up modifying the heck out of it. Normally it comes with butter chicken and sauce, mushrooms, onions, green peppers, tomatoes, cheese and cilantro. I always order it without the mushrooms, onions or peppers. I just think it tastes so much better that way, and that is why I made mine this way.

Of course, if you want to add vegetables you can definitely do that.

Basically, you start off with some pizza dough, chicken, store bought butter chicken sauce, tomatoes, mozza and cilantro. Easy Peasy.

What I did was diced up some chicken breasts and sauteed them until cooked through, then I added the butter chicken sauce and got it nice and heated through, I also added some sriracha to mine because I needed more spice!

Then I layered the butter chicken and sauce right onto the pizza dough.

Topped it with some tomatoes

Then topped with cheese

If you’re thinking, “that’s a BA (big a$$) portion of cheese, then you’re right it is.

Deal with it.

Now you bake it off!

UMMM… heck yes!

Now add some cilantro for some greenery

And now transfer it to a board to cool slightly.

And now proceed to gaze at it until the cheese is no longer molten lava hot, and then slice ‘er up!

Taste and decide you’re going to make this for dinner every night.

Butter Chicken Pizza:

Serves 3

1 prepared pizza crust on a non stick cookie sheet (not cooked) my recipe is below

1 tbsp olive oil

2 small chicken breasts diced

1 jar (14 oz/400ml) butter chicken sauce ( I used Patak’s Brand)

2 tbsp sriracha chile sauce

1 cup diced tomatoes

2 cups grated mozzarella

2 tbsp chopped cilantro

Preheat your oven to 400 degrees.

In a medium saute pan, heat oil over medium high heat, add chicken breasts and saute until browned and cooked through, add the jarred butter chicken sauce and the sriracha. Bring to a simmer and turn off the heat. Set aside.

Top the prepared pizza dough with the butter chicken, you may not need all the chicken and sauce. Then add the tomatoes, followed by the mozzarella.

Bake for 15 minutes and then lower heat to 375 and bake for another 5-7 minutes until the cheese is browned and the crust is golden. Remove from the oven and sprinkle with the cilantro. Allow the pizza to cool in the pan for 5-6 minutes. Move to a cutting board and slice into squares.

My New Swag!

Good Morning Everyone! Happy Friday!

Seriously, TGIF.

Remember TGIF? For all those 80’s & 90’s children, you know what I’m talking about. The lineup of shows every Friday that we would all be dying to watch. My mom used to make us popcorn and we would spend our night watching Family Matters, Step by Step, Clueless (my personal fave,) Boy Meets world and Hangin’ with Mr. Cooper. Best nights ever. I wish there were still epic TV lineups like that to watch.

Anyways, back to what I am supposed to be talking about. My new swag! Carley, my lovely sister in law (not really because Chris and I aren’t married, but close enough) told me the other day she found this amazing place that did business cards, and she wanted to re-design my cards and get me some new ones. The ones I had were just made at one of those generic places where you can’t really customize your cards the way you want, so when she asked I was totally on board.

Carley did the design and placed the order and when I received them I was beyond impressed.

Please excuse the quality, it was late at night when I decided to take these photos.

I love the rounded corners and the type of card this is made of, it has a really soft feel.
