Lightened Up Chicken Parmesan

Lightened up? What the what? Are you on the right blog? Seriously, I’m asking you cause I’m really not sure myself.

I don’t DO lightened up. Don’t get me wrong, I like eating healthy and all. I’m on a huge Kombucha kick right now and although I originally thought this fermented tea drink would make me gag, I’ve actually been chugging it daily. I eat protein bars and Greek yogurt for snacks and drink like 6 travel mugs of green tea a day. So I do consider myself a fairly healthy eater.

However, what I don’t DO is lighten up classic dishes. I wouldn’t dare sub in low fat milk in a recipe that calls for cream. I don’t use margarine because, come on, that’s sacrilege right there. And above all, I would never, ever, use sweeteners that contain aspartame or any other man made sweetener for that matter. I won’t get into the whole thing and I know that there are a lot of people that use those sweeteners for health reasons like diabetes etc. However I have read many recent studies that show that the chemicals in the sweeteners are really bad for us. I also think they taste yucky!

I am of the belief that everything is about balance. If you ate a double cheeseburger for lunch then, no, you probably shouldn’t eat a massive bowl of pasta for dinner, but if you ate a salad for lunch, then heck, dig into the pasta later that night. I don’t deprive myself of any single food, I just try to eat it in moderation if it’s low in nutritional value or high in calories.

That being said, I do often lighten up the method of cooking. As opposed to removing/substituting specific ingredients from a recipe, I usually just change up the cooking process. For example, the main reason this recipe is lightened up is that I baked the chicken instead of pan fried it. I used panko breadcrumbs instead of regular breadcrumbs so you still get the super crunchy outside, but since it is baked, it is much less greasy! I also used chicken thighs which have a lot more flavor than chicken breasts, so you aren’t missing the rich fried taste.

See it’s all about balance!

Lightened Up Chicken Parmesan
Serves 6

6 bone in & skin on, chicken thighs
1 cup flour
1 egg, beaten
2 tbsp water
2 cups Panko bread crumbs
Non stick oil spray
3 cups of your favorite marinara sauce (store bought or homemade)
1 lb uncooked pasta (I used linguine)
1 cup freshly grated Parmesan cheese
Salt and pepper to taste

Preheat oven to 350 degrees. Cover a baking sheet with aluminum foil and place a wire rack (about the same size of the baking rack) on top of it.

Using paper towels, dry the chicken all over. Season the chicken pieces with salt and pepper.

In 3 shallow bowls, place the flour in one bowl, the egg and water in the second bowl and the panko in the last bowl. Season both the flour and the egg mixture with salt and pepper.

Start by dipping the chicken thigh into the flour, and then the egg mixture and lastly into the panko. Once fully breaded, place on the baking rack. Repeat with the remaining chicken thighs. Once all the chicken is coated. Just give each piece a quick spray with the oil spray. 

Bake the chicken at 350 for 45 minutes, until completely cooked through.

In the meantime, get your water boiling for your pasta as well as heat your marinara sauce in a wide pan over medium low heat. Once the chicken is finished, remove from the oven and get your pasta cooking as per the package directions. Add the chicken to the marinara sauce, leaving the heat on medium low, just allowing the bottom of the chicken pieces to touch the sauce so the top stays crispy. Top each piece with a heaping tablespoon of Parmesan and cover the pan with the lid.

By the time the pasta is finished, the cheese should be melted completely onto the chicken. Serve the chicken and sauce over the cooked pasta.

Brie and Fig Bites

Couple things…

1. Has everyone entered my giveaway?!?! Make sure you do. It ends tonight and I will announce the winner tomorrow at noon PST.

2. I’ve been watching this little snookum for the past few days while my parents are away in Mexico.

Since my mom is normally home most days with her, she isn’t really used to being left at home all day. Which is what happens when she stays with Mr. Delish and I, since we both work full time. So my Mom and I decided that we would take her to doggie daycare a couple of the days while they were away, just so she wouldn’t be pent up in the house all day long.

So yesterday I dropped her off in the morning on the way to work and I was totally amazed at how awesome the place was. Just doggies running around in a huge yard of cedar mulch. There was a bunch of big toys in the yard for the dogs to run around and play on. Seriously, it looked like the most fun ever. So I picked her up after work (over 9 hours later) and they told me that she literally played the entire day. Like didn’t rest once.

Usually she’s all over the car trying to get into the front seat and just being plain crazy, but when I took her home last night she passed right out and then didn’t want to get out of the car. I had to carry her inside and she ended up just sleeping downstairs because she was too lazy to walk upstairs.

I swear she’s been sleeping ever since.

3. Our Valentines day dinner was SO delicious last night! Anyone that lives in the Vancouver area, I highly recommend that you try Pearl Urban Bistro, which is on White Rock beach. Very yummy.

4. I have the easiest almost non-recipe for you today. Let’s GO!

Roll out a sheet of puff pastry.

 Stick the pastry square into a mini tart pan, the ones I have are little individual ones but you can also use those mini muffin type pans.

My tarts look pretty rough, hey? I must have been impatient every day of my life that day. That’s okay they still turned out pretty in the end.

Stick a piece of brie in each tart.

Top the brie with about a teaspoon of fig preserves.

And bake them in a preheated oven for a few minutes.

Mmmm sweet and cheesy and gooey. Perfect!

I ended up serving mine with a drizzle of reduced balsamic vinegar (which i forgot to take a picture of!)

They’re sweet and salty and the perfect bite size.

Brie and Fig Bites:
Makes about 20 tarts

1 sheet (half a package) all butter puff pastry, defrosted
1/2 cup brie, cut into 20 equal pieces
1/4 cup fig preserves

Preheat your oven to 350 degrees.

Grab your defrosted puff pastry sheet and cut into 20 equal squares. Place each square into a mini tart pan and top with a piece of brie and about a teaspoon of  the fig preserves.

Bake for about 12-13 minutes until puffed and slightly browned. Allow to cool slightly, about 2-3 minutes, before removing them from the pan.

So since we have finally started the super fun Glymm Giveaway, I decided to continue with the beauty thing and share with you some of the products I am currently obsessing over.

1. “I Love….” bath and body products.

Especially the shower gel, I use it every morning and it wakes me up and makes me ready to start the day! They have lots of different scents but the Vanilla & Ice Cream is my favorite. 2. Revlon Grow Luscious Mascara (not the plumping one.)

I discovered this mascara over a year ago just by accident. I went into the beauty boutique in shoppers drug mart, where they sell the higher end makeup and I went to grab my good ol’ standby at the time which was Dior Show mascara. As usual, I looked at the price and suddenly felt guilty for spending $35 on a tube of mascara, so I asked one of the associates if they had anything like the Dior one and the girl let me in on an awesome little secret. I’m not sure if this is totally true or not, but she told me that Dior didn’t have their brush patented and Revlon copied it for this mascara.

I don’t vouch for the fact this makes your lashes grow, but it does make them thickened and longer while you’re wearing it. They sell this at any drug store and its less than $10. Score.

3. Bare Escentuals Mineral Makeup

I was skeptical when a friend suggested this because I have fairly dry skin and I figured, dry skin + powder foundation = bad combination, but I was very wrong. I now use this makeup everyday. It’s light and doesn’t feel cakey at all but it provides good coverage. Also over time I found that this improved the overall condition of my skin. They say its “so pure you can sleep on it” and it’s true. I don’t feel guilty if I accidentally leave this on overnight.

4. Rosebud Perfume Co. Strawberry Lip Balm

I bought this as an impulse purchase (darn those racks near the checkout counter at Sephora.) But I love it, it smells yummy and goes on nice and smooth without being sticky. The container is also HUGE, like this will last you forever.

5. Lush Cosmetics Dream Cream

I love anything by Lush. All their cosmetics are handmade and contain all natural ingredients and they smell freaking delicious. This Dream Cream contains Chamomile and Lavender and calms your skin. If you’re like me and need to slather lotion on as soon as you get out of the shower or your skin will hate you all day, this is the cream for you. It’s super moisturizing and takes away that tight feeling you can get after washing your skin with soap.

You can buy it in store if you’re lucky enough to have a Lush location near you, or you can order it from Lush online!
